Honey Pecan Chicken

My Daily Plate today consisted of Honey Pecan Chicken breasts, smashed grilled potatoes and English peas with Thai basil. The chicken recipe is my own original and is quite simple. For the chicken breasts, pound them down thin, then use a brush to brush both sides with olive oil. Lightly salt and pepper them and place them on a hot grill. Meanwhile mix together 1/4 cup honey and 1 tablespoon of lime juice. I added some chipotle powder, just because I like the peppery bite. Place the honey mix in an oven proof ramekin. Place the ramekin on the top rack of the grill to warm up. Place some pecan pieces in a nonstick skillet and roast them. Once the chicken is done, drizzle the top with the honey mix and sprinkle with the roasted pecan pieces.  I thought it was a very successful meal.
